Jumbo bagels

Living in Denmark means that good quality bagels are hard to come by! And those I eventually come by, are quite small, almost burger bun size I would say. These are quite the opposite, large enough to call a sandwich! And you can costumize them with whatever flavour you prefer!

Bagel recipe

Servings: 9-10 large bagels

Time: 3 hours total

Prep & storage: Best eaten within 3 days. Covered airtight, in plastic bags.

Notes: This recipe can be made with any types of toppings. You can also freeze the bagels before or after baking. If you freeze them before baking, i recommend shaping the bagels and letting them rest for a brief 25 minutes in plastic bags and then transfer them directly into the freezer. When you are ready to bake, let them thaw on the counter top for an hour and continue with step 9.

Ingredients:

750-800 g flour (depending on how watery your yogurt is) (less water - more flour)

275 ml water

7 g instant dry yeast

2 tsp salt

2 eggs

225 g greek yogurt

+ baking powder for boiling, cheddar cheese, chillis & bagel seasoning. You can however costumize the bagels however you want!

Instructions:

1. Combine all the wet ingredients in a bowl.

2. In another bowl, combine the instant dry yeast with flour and salt, and add it to the wet mixture. Mix together for a few minutes. You can use a standmixer or your hands.

3. Kneat well for 7-8 minutes, give it a rest for 5 minutes and then continue to kneat for 5-6 more minutes.

4. Collect the dough into a ball shape and cover with a damp towel.

5. Let it rise for 45-60 minutes.

6. Give the dough a punch and divide it into 10 equal balls.

7. Dust some flour (around 50 g) onto a surface, and roll the dough balls out as shown in the video. Shape them into bagles and make sure to tug in the ends very well.

8. Let the bagels rise for a second time for 40 minutes.

9. Bring a big pot of water to boil and add 1 tsp baking powder. Preheat the oven to 185 degrees celcius in the meantime and prepare a topping station. Drop each bagle into the water and let them cook for 2 minutes maximum.

10. Transfer the bagels onto a baking tray with baking paper and top them with eggwash and you favorite toppings. Bake for 18-22 minutes.
